Molasses-Roasted Pork Tenderloin

 

Now that our kitchen is put back together, I am starting the Sunday night dinner tradition back up!  This week we made Molasses-Roasted Pork Tenderloin!  Thanks to my last screw-up, I actually know the difference between a tenderloin and pork chops so we actually made the correct recipe :)

Ingredients

  • 2 tbs molasses (had this!)
  • 1 tsp freshly ground black pepper (had this!)
  • 1/2 tsp ground cumin (had this!)
  • 1/2 tsp salt (had this!)
  • 1 (1-pound) pork tenderloin, trimmed (only thing I had to buy!!!)
  • Cooking Spray (had this!)

Step 1: Preheat oven to 375 Degrees

Step 2: Combine first 4 ingredients in a small bowl and then brush onto pork.

Step 3: Place pork in an 11 x 7 inch glass dish and put in the oven

Step 4:  We cooked ours for about 30-40 minutes – I don’t like to see any pink although with Pork, pink can be okay.
