I was searching for a healthy and quick recipe the other night that only used ingredients -or Ingredientses as Teresa Giudice likes to say – that I had in my house. I found this yummy Turkey Taco Skillet dish on Woman’s Day. I cut a lot of the items out to make it more healthy:
Ingredients:
- 1 pound(s) ground turkey (97% lean)
- 1 package(s) (1.25 oz) low-salt taco seasoning mix
- 2 cup(s) water
- 1 jar(s) (16 oz) thick & chunky salsa
- 1 can(s) (11 oz) Mexican-style corn
- 2 cup(s) instant brown rice
- 1 cup(s) shredded Mexican or taco cheese blend (did not use)
- 2 cup(s) shredded lettuce (did not use)
- 1 large tomato, chopped (did not use)
- 1/2 cup(s) reduced-fat sour cream (did not use)
- Serve with: baked tortilla chips (did not use)
Directions:
- Cook turkey in a large nonstick skillet over high heat, stirring to break up meat, 5 minutes or until browned. Stir in seasoning mix, water, salsa and corn; bring to a boil. Stir in rice. Cover and remove from heat; let stand 12 to 15 minutes, until liquid is absorbed. Sprinkle with cheese; cover and let stand 1 to 2 minutes to melt cheese.
- On plates, top rice mixture with lettuce, tomato and sour cream. Serve with tortilla chips.
